Evaluation of certain food additives and contaminants : 41st report of the Joint FAO/WHO Expert Committee on Food Additives

Presents the conclusions of an expert committee commissioned to, evaluate the safety for human consumption of selected food additives and naturally occurring toxicants to establish acceptable daily intakes for these substances.

This particular report contains toxicological data on various antioxidants, flavouring agents, flavour enhancers, food colours, sweeteners, thickening agents and other additives.

Other regular inclusions to this report are acceptable daily intakes for humans and principles of toxicological evaluation.
